Banana Chocolate-Chip Muffin (Penzeys Spice Recipe)

I love Penzeys spices. I'm lucky to have a shop nearby, but if you don't they have a good catalog and mail order department. As you know, I love to pick up recipe cards at stores, and I picked up this one at Penzeys on my last visit! You can find the recipe for Banana Chocolate-Chip Muffins on their website here.

This is a simple recipe: butter, sugar, eggs, vanilla, flour, baking soda, cinnamon and mini chocolate chips. I reserved a bit of the chips and placed them on top of each muffin.

The yield is 18 cupcakes but I got 13. Next time, I'm going to fill them a little less. They are pretty dense (like banana bread) and I ended up baking the overfilled muffins for 10-15 minutes longer than suggested in the recipe (but I think if I didn't overfill them, the timing might be right on)...anyhow, watch the time.

It has two bananas. Therefore, it is health food! :)

    I am SO jealous of your proximity to Penzeys. I don't get out to LA much so I have to do the mail order thing but I bet walking into the store smells heavenly...

    I definitely would consider that a health food :)

    We got a huge box of Penzey's spices for our wedding and I LOVE them.

    Hi, Mary...I always loved the Penzeys catalog and had so much fun when I happened on a shop in Grand Central Station, of all places! I think they have a store somewhere near my new home in Brookline...shall have to search.
    These sound delicious...I sometimes put chocolate chips in my banana bread. See you soon - happy holidays!

    I'm very envious of the fact that you have a Penzey's near you. I need to order something from them so I start getting their catalogs again. =) The muffins look delicious.

    Thanks for plugging Penzeys! I'm from WI and only use their spices and am always thrilled when I hear someone else mention them. I'm in CA now but still too far from their shop ...oddly enough, it's easier for me to load up when I go home!
