Peanut Butter-Chocolate Chunk Cookies (Everyday Food)

I made these simple Peanut Butter-Chocolate Chunk Cookies (from Everyday Food) last night for a peanut butter fix.

I enjoyed them a lot because they were, well, fluffy! You know how regular peanut butter cookies (with the criss-cross) are sometimes crispy? Well, these were little balls of baked peanut butter goodness. My co-workers and I ate them all on the first day...so I never know how things are "the second day."

Simple ingredients: flour, baking soda, peanut butter (I used Skippy smooth), butter, dark brown sugar, regular sugar, eggs, vanilla and semi-sweet chocolate chunks (I used chocolate chips).

The recipe says it makes 36 cookies, but I made them small (with my cookie scoop) and got 71 cookies! Yes, 71 cookies of goodness! Here is the recipe from Martha Stewart's website!

  3. I just saw this cookie in my latest issue of Everyday Food! I wanted to try it because, like you mentioned, it looks fluffy and not flat like most peanut butter cookies! Gorgeous photos!

  10. These look so yummy! I love fluffy peanut butter cookies. Since I'm on a peanut butter fix (have been for a year now) I always have a jar in my cupboard. I'm going to make these soon.

  11. This is the perfect recipe for my house. I can leave the chocolate chips out of some so my hubs will eat them, and add chocolate to the rest for us normal people. I heart peanut butter + chocolate.

  20. Those are just the type of cookie that appeals to me fluffy chewy soft and NOT crunchy or hard.

    Great photos....I can usually pass up a cookie no problem but I'll be thinking about those cookies all day now!
