Lemon Cup Custard
This week, Bridget of The Way the Cookie Crumbles selected Lemon Cup Custard on page 387 of Dorie's book, Baking: From My Home to Yours.
Not since the raisin haters came out of the closet was there so much trash talk about the egg on the Tuesdays with Dorie website. Who knew that the little egg caused so much gag reflex to so many! Unlike my Ecuadorian friend who eats everything with an egg, I discovered there are many a baker out there who aren't card carrying members of Egg Custard Council.
I'm not a big fan of the egg custard, but I wanted to give this recipe a go. I made 1/4 of the recipe and that filled three mini-ramekins.
I followed Dorie's basic recipe and couldn't find my lemon extract so I just used the zest of two Meyer lemons to lemonize the custard. It's beyond simple to make, and I'll let my friend decide. I think I overcooked it a bit and it should have been a bit more jiggly (like parts of my body nowadays...but I digress). Also, I strained it twice...when adding the milk and when placing the custard in the ramekins. I probably won't make again, but I'm glad I gave it a shot.

Eating everything with an egg is pretty great. For breakfast this morning I had leftover lasagna with a poached egg on top. Is that weird? Because it was really good. Your mini custards look wonderful!
ReplyDeleteMan, you are not kidding -- the P&Q was hopping this week with egg hating backlash! I actually love eggs, but did not love this custard. I think I messed it up, though (overbaked), so I am curious if I would like the custard that, say, Dorie made. Yours really looks perfect!
ReplyDeleteWell, it looks pretty! I went with the espresso cinnamon combination and it wasn't my favorite either but at least we tried :)

Haha, I love the comparison you made between the egg haters and the raisin haters! What about the prunes?! Your dish looks fabulous, and even if it wasn't your cup of tea, great job giving it a try!!

ReplyDeleteBecause I don't talk about myself on my blog, nor do I give my opinion on what I make (should I not like it, I wouldn not post it) ...I'll tell you that I loved it. It was a bitg hit with my bubby and my daughter too!
ReplyDeleteBeing such an easy dessert, perhaps you could try making it again sometimes... with a more powerful added taste like chocolate, or cinnamon... or lavender?
Anywho... they look pretty nice, those minis!
I'm not a big sweets person, but I love egg custard! This is my kind of dessert... tangy, a little bit sweet and creamy... no whipped cream or anything :)
ReplyDeleteI love the miniature ramekins!!! I started my diet last week and am only allowing myself one bite of everything I bake, I bring the rest into work. Since custards are a bit difficult to bring to work and bringing only 6 custards for about 20 colleagues would cause a riot I decided not to make these....

ReplyDeleteI had some custard for breakfast figuring it's egg and milk, which is pretty much breakfast. I liked the texture and taste, but can understand how it would not have universal appeal. Your custard looks like it turned out great.

I also used Meyer lemons but wonder if the standard Eureka would have added a little more oomph to this recipe. Yes, $4/pound...and they just fall off people's backyard trees in CA! Oh well, we have better maple syrup here, I guess...
