(Upside Down by Accident) Blueberry Buttermilk Cake
Who doesn't love the Smitten Kitchen? She's amazing and always come up with the most delicious dishes.
When I saw her Raspberry Buttermilk Cake, I knew I had to make it. I love breakfast and tea cakes. I just don't like frosting...I've been peeling it off since I was a little kid!
Also, I bought the mammoth box of California blueberries from Costco and have to come up with 10 ways to use them. :)
The batter came together quickly. Very easy and "lower" in fat...only 1/2 stick of butter! I sprinkled 1 cup of blueberries on top and popped it into the oven...
When I opened the oven, the fruit was gone. I thought there were in the middle...but no, they were on the bottom.
I probably used too many blueberries and next time I can dust them in flour or wait a few minutes before popping them in the batter. Smitten Kitchen's and Gourmet's fruit fell, but not all the way to bottom like mine.
So, like the saying, "when life gives you a cake with blueberries on the bottom, turn the damn thing over," I served it as an upside down cake, and dusted it with some powdered sugar.
The bottom had a nice crunch because the sugar topping was on the bottom! :)

ReplyDeleteMine did the same thing - looked just like yours. Must be the consistency of the dense BBs? Regardless, it tastes SO good.

I think it looks so pretty though! At least they all fell and not bits of blueberry everywhere. Everything you make always looks amazing!
ReplyDeleteLooks yummy! As a single person with no car, I am sadly unable to purchase Costco blueberries...which is depressing, since I love them. I resort to buying absurd numbers of them when they go on sale at the local QFC :P But I also am not the hugest fan of frosting - high five! Love your blog :)
ReplyDeleteI haven't looked at the recipe for this yet (need to run in two seconds) but there's a blueberry coffee cake recipe I've made a few times that calls for you to add the blueberries midway (or so) through baking, which ends up with the blueberries nicely splattered on top.

I wish I could have a slice of this gorgeous tea cake for breakfast. Sorry I've been away for the past week; I had a good friend in town and wasn't able to do much on the computer. I'm back now, though :)
ReplyDeleteI didn't read the original recipe, but in many recipes I've read involving blueberries in baked goods, it usually suggests to toss the blueberries in some corn starch first. This supposedly keeps them from sinking.

Beautiful cake though, the layering looks really neat. It might be better of with the blueberries sinking.

ReplyDeleteLooks fantastic. My grammie has a recipe I've made every year since she passed... trick to keeping the blueberries from sinking (aside from picking your own or finding the rare small ones I remember from my childhood) flour the blueberries before folding them into the batter : )
