For this month's Martha Stewart Cupcake Club, Tracey from Tracey's Culinary Adventures chose Zucchini-Spice Cupcakes on pages 44 of Martha's fantastic book: Martha Stewart's Cupcake Book. Tracey is the most awesome baker, cook, and all around nice person! I love her! Go visit her blog!
Martha Stewart Cupcake Club is a new baking club started by Sugar B of Eat My Cupcake and we are going to make one cupcake recipe per month (or more!) Check it out on the new website here.
I made this recipe earlier with a simply glaze, but this time I made it with the recommended Cream Cheese Frosting. It was the first recipe I made from this book, and it's a winner! I was very happy to make it again as I still had lots of zucchini hanging out in the veggie drawer.
The recipe calls for a boatload of cream cheese frosting. I made 1/2 the cupcake recipe and about 1/4 of the frosting recipe. Me thinks Martha and her crew love the frosting way more than me. :)
Be sure to check out the other Martha Stewart Cupcake Club members and their version of the recipe! And be sure to make this tasty treat! (The cupcake is dairy free but the cream cheese frosting...well, is not!)
Recipe:
Martha Stewart's Cupcake Book: Zucchini-Spice Cupcakes, page 44
Note: The Martha Stewart Cupcake Club doesn't post the recipe. You can use WorldCat to see if your library has it in their collection (hey, I need to put the Librarian in the Food Librarian sometimes! :)
I thought this recipe sounded familiar! They look so pretty with the frosting. I don't care for frosting but I always have to make extra when it comes to my in-laws cos they love the stuff. Can't understand it!
ReplyDeleteI am glad you made and liked these cupcakes! They look fantastic!
ReplyDeleteI hate to be the cupcake party pooper, but I wasn't a big fan of the texture and overall taste of mine. Oh well. You win some, you lose some.
Thanks for baking along with us this month!
You are a baking super star!
Hm... a glaze - now that sound equally as delicious! I agree - there was enough frosting to make... a cake, which I did! These look fantastic - especially outdoors, I love the serving tray!
ReplyDeleteThese look absolutely delicious!!!!!
ReplyDeleteLooks wonderful. Yum...all of that yummy cream cheese frosting!
ReplyDeleteNice job. I had tons of frosting too, but that frosting was soooo good. I love how you piped it on and left some of the cupcake bare.
ReplyDeleteBeautiful! I am glad you made them again with the frosting. They look so cute. I really liked them too and yay! for dairy-free (hasn't it been 3 weeks yet?)
ReplyDeleteThese look so pretty. I need to get a pastry bag to make pretty cupcakes too.
ReplyDeleteAnd zucchini make breads/cakes so moist.
Great looking cupcakes!
ReplyDeleteI like the idea of a glaze. Of course, yours look very inviting with the frosting too!
ReplyDeleteNikkilooch, I didn't use a pastry bag...just the tip in a Ziploc freezer bag! It makes it easy to toss after completing the piping! :) - mary the food librarian
ReplyDeletethey look gorgeous!
ReplyDeleteYour cupcakes looks picture perfect :)
ReplyDeleteI thought these were just terrific, too. I did make one (or two) with the cream cheese frosting, but enjoyed them just as much plain.
ReplyDeleteThese look perfect. I love the piping. I had so much cream cheese frosting left over it was ridiculous. Love the pictures.
ReplyDeleteThese look wonderful!! Great pictures!
ReplyDeleteoh my! these look delightful! I love zucchini bread/muffins/cupcakes, mostly because I don't feel guilty eating them because there's a vegetable in them! haha
ReplyDeleteHappy Baking,
Mini Baker
Super cute cupcakes!
ReplyDeleteI've seen that book and the cupcakes all look so tempting. Looking forward to all your renditions.
ReplyDeletewow your cupcakes came out to beautifully!
ReplyDeleteAfter seeing all the cupcakes floating around, and constantly seeing the two BIG zucchini on my counter, I'm going to have to make these! They look de-lish!
ReplyDeleteYou can never have enough cream cheese frosting :) Yours look adorable though, with their little swirl on top!
ReplyDeleteWow, these cupcakes look positively gorgeous!!
ReplyDeleteYour frosting is amazing! I forgot the cream cheese, so I just used powdered sugar. After looking at everyone's blogs, I am so wishing I'd had the cream cheese.
ReplyDeleteI love your photos!! Fabulous. I didn't love this recipe but it wasn't bad, esp with frosting!
ReplyDeleteThat's a gorgeous swirl Mary! I'm glad you enjoyed these.
ReplyDeletebeautiful pictures!! i loved these cupcakes. they were so delicious!
ReplyDeleteThanks so much for baking with me this month Mary and for your kind words! I love you and this fabulous blog too :) Great photos - Martha herself couldn't have made these look any better. I loved this recipe, especially with the cream cheese frosting but maybe someday when I'm trying to be healthier I'll go with a glaze and save some calories!
ReplyDeleteThank you so much for your sweet comment on my blog! Let me tell you, the chocolate chips were the perfect touch! And your cupcakes are sooo cute! My piped swirl just doesn't compare! I love your blog. I'm in with TWD as well but didn't get a chance to jump on the apple turnovers for this week! Wanted to let your know that yours look delicious!
ReplyDeleteLovely cupcakes! I like the cross-section shot. I agree that the frosting recipes make way too much, but maybe that's not a bad thing when it comes to cream cheese frosting.
ReplyDeleteLove the cross-section shot, very nice. All of it is very nice. You are right, it made a boatload of icing and I only made half also...does this stuff freeze??? I noticed that the pumpkin recipe calls for this, I think, so maybe I should just go ahead and do that one and use up the icing! Your cupcakes are beautiful!
ReplyDeleteYour cakes are so beautiful!!

These were a winner! I have been a follower of your blog for ages! Thanks!
ReplyDeleteThose look perfect. Just the right amount of frosting on top.
ReplyDeleteYour pics look amazing! I agree on the comment about Martha and her folks liking frosting because I had a ton leftover...enough to ice some brownies.
ReplyDeleteI think I'm going to have to breakdown and buy the Cupcake book. I have the Cookie book and it's great. I love the swirl of cream cheese frosting!
ReplyDeleteThese look great! I like living vicariously through all of you cupcake bakers. :P
ReplyDeleteI just made this for the second time - a full batch of 2 dozen - and they disappeared frighteningly fast. I put cinnamon in the cream cheese frosting and only made half the frosting for a full batch of cupcakes.
ReplyDeleteLooks great! Love the pics! I cut way back on the frosting too...
