Today’s Big Bundt is a Cardamom Vanilla Pound Cake baked up in a Nordic Ware Bundt Pan. This is a rich pound cake with a nice subtle flavor of cardamom and vanilla. You can even wait a day before serving so the flavors can develop.
Thanks to my friend JustJenn of JustJennDesigns for making the logo!
Yes, I'm make 30 Bundts to inspire you for National Bundt Day (November 15th)!
I used vanilla paste instead of vanilla beans. I love the convenience (and cost) of vanilla paste. Have you tried it? I can also just pour the stuff on ice cream!
This has absolutely nothing to do with this Bundt but I have got to go to bed! After work tomorrow I'm going to a party and I'm so excited. I can't tell you about it until after the fact...but I hope I can snap some photos and write about it tomorrow. And no, it isn't Bundt related. But it IS cute-related. So crazy cute!
Like Day #4 Cinnamon Ripple Sweet Potato Bundt, this is a Big Bundt and pretty much fills the pan. Be sure to use a 12 or 14 cup Bundt pan.

ReplyDeleteSeriously, you're making me fat with all these wonderful bundt cakes... and I haven't even made any of them yet!

I love the idea of these two flavours together. I'm enjoying every day of Bundt month. Thanks so much for baking for us!
ReplyDeleteHi Mary! I think I've finally found a serious contender recipe for my department's Halloween party next week in this Bundt. I'd been having trouble finding something to make that would be not blatantly "Fall" but still be "warm" and "spicy." This one looks particularly awesome (not that the other ones didn't, I am fully planning to print out all the recipes from this month, hehe). I think I'm going to try to pair it with a quick strawberry sauce also spiked with vanilla and cardamom... I'll let you know how it goes.
ReplyDeleteI still haven't tried vanilla paste. Clearly I need to. And I love cardamom!
ReplyDeleteIf you made I Like Big Bundts a monthly event, I would so join. I love it! And I have all 6 marked on the to-do. Keep em comin. :)
ReplyDeleteI've never had cardamom before. The crumb on your cake looks perfect.
ReplyDeleteI've fallen in love with Cardamom lately. This cake sounds amazing!

Cardamom is one of the elements I learned I liked from TWD, among many other things. YIPEE!! You are baking strong! Way to go. I can't wait to read more. You are starting a nationwide Bundt cake revolution. Did you know that? hehe
ReplyDeleteAmyRuth
Have fun at the party.
I need to buy a bundt pan immediately. I don't know why I don't have one....this recipe looks amazing:)
ReplyDeleteI love cardamom! This cake looks wonderful.
ReplyDeleteMary, I'm wondering if you have a recommendation on a mini bundt pan. I know you have a variety of pans, but I'm not sure if you have any minis. I took a look on Amazon, and there is a pan that's like a muffin pan, but bundt-shaped, and then there are pans that are a little bigger (with 6 small bundts per pan). If you have a mini pan that you like, I'd love to hear about it. Thanks!
I baked this yesterday and think I needed to be a bit more generous with both the cardamom and vanilla, went down well at work though.
