I made these in the nick of time. After spending 30 days surrounded by Bundts, making cupcakes was a treat! I made 1/4 of the recipe and baked them up into mini cupcakes.

Aren't these the cutest liners? I picked them up at Surfas. The batter is simple to put together and uses cooked sweet potatoes.

The topping is simply torched or broiled mini marshmallows. I skipped the nuts that go on top.
