Gingerbread Cupcakes - MS Cupcake Club
For this month's Martha Stewart's Cupcake Club, Kayte from Grandma's Kitchen Table chose Gingerbread Cupcakes with Cookie Cutouts on page 246 of Martha's fantastic book: Martha Stewart's Cupcake Book
You were supposed to top these with Royal Icing, but I couldn't find my meringue powder...and thus you get a quick powdered sugar glaze instead! Where could that meringue powder be...
Thank goodness the Gingerbread cutouts were optional. I'm just not a cut-out cookie kinda gal right now. So, using Flickr's holiday collection (click on Edit Photo and Create), I put this gingerbread man on my cupcake. Honestly, I haven't been feeling the holiday spirit. It is more like, as a friend says, holiday panic.
When these came out of the oven, I thought the spices were kinda weak, and the flavor more butter than molasses. I tried them this morning and still aren't that crazy about them. But aren't these cupcake wrappers cute? Little snowmen! :)

I really like your icing swirls and those cartoon gingerbread men. Don't get caught up too much in the holiday panic (if only I could take my own advice!)

ReplyDeleteI love your paste-on decorations! I made mini-muffins with lots of cream cheese icing and they were a hit. Who doesn't love cream cheese?
ReplyDeletecupcake wrappers are very cute, the clip art is clever, and i agree...not a great cupcake/muffin. i'd only make these again if on special request. ;)

Yours look adorable (no decorating for me either). I agree with you about the flavor. I thought they were more sugar than spice.

ReplyDeleteI love the way you edited the photos - Picnik has the same options but I decided to use the Santa hat for my dog instead.
I love gingerbread anything! Love the swirls on the top of it. Pity you didn't fancy them so much though.
ReplyDeleteMartha definitely has more spicy recipes in that book that are closer to gingerbread but I think these still were pretty good. You needed to eat the cookie on top at the same time to get the full effect. Good luck next month!

Very cute way of decorating...my kind of way of decorating. I joined so I could challenge myself on the different flavors and frostings, but figured the decorating part was just not me...LOL. I'm a simple kind of gal, not a lot of fuss. In a house full of guys a lot of fuss isn't noticed...but the food sure is. Where did you find those cute snowmen wrappers? I have got to step up the wrapper shopping for sure. BTW, love following you on twitter and those bundts were all too too good to be true. You are a star!

ReplyDeleteGreat looking cupcakes! I heart gingerbread. I just discovered the joys of meringue powder - Michaels carries the Wilton version of it but I had to stand in a ridiculously long line to buy it.

ReplyDeleteI love the icing swirls and cupcake wrappers. But I agree...the cupcakes were good, not great. And with so many delicious cupcake recipes out there, I doubt I'll go back to these.

ReplyDeleteand when you feel more 'holiday panic' rather than 'holiday spirit' stop!! grab a cup of hot tea and a blankie and just sit down. if even for 5 minutes. recharge your batteries (so to speak) 5 minutes does wonders. scout's honor! :)
