Rosy Poached Pear Tart ...sorta
For this week's Tuesdays with Dorie selection, Lauren of I'll Eat You selected Rosy Poached Pear and Pistachio Tart on pages 370 and 371 of Dorie's book, Baking: From My Home to Yours.
If you are a pessimist, you could call this a major fail (not the recipe, but me).
If you are an optimist, you can call this a very figure friendly adaptation to the printed dessert.
I only got my one pear poached. No crust. No nuts. No pastry cream. And, heck, no partridge in a pear tree.
But my pear ROCKS.
I don't drink so I tried poaching it in a Pomegrante Cranberry cocktail. However, after a few minutes on the stove, I knew the color of the drink wasn't strong enough to transfer to the pear. I searched the kitchen for other red products.
Hum, here is what I found:
1. ketchup
2. kimchi
3. sriracha "rooster" sauce
4. tomato sauce
5. cranberries in the freezer
Guess what I threw into the pot?

I hope to someday make the whole recipe, but I am really enjoying this dairy-free option! ;)

I think poached pears are quite nice on their own! The cranberries gave the pear such a lovely tint of red.

I will be teaching six different culinary classes for our community starting in February and can't wait! Is your class just a demo or hands on as well?! I am still debating on what will work best :-)

ReplyDeleteYour pear is lovely indeed. Good move, choosing the cranberries from your available "red" options. I made my tart grain-free, but a future project is to create dairy free pastry "cream".
ReplyDeleteI used a little POM juice in my much lighter version of this tart, too! But I didn't poach the pears. Yours look beautiful!

ReplyDeleteI wish I had thought to just poach a pear and call it a day! I didn't have time to make all of the components so I didn't make anything. Your pear looks fantastic - I might just give this a try!
