For this week's Tuesdays with Dorie selection, Tanya of Chocolatechic chose Rick Katz’s Brownies for Julia, page 91 of Dorie's book, Baking: From My Home to Yours.

When the Food Librarian is tired:
a. I can fall asleep anywhere. Including hallways. Just ask @davery90230
b. I start to daydream about sleeping.
c. I look for shortcuts to save time so I can go to bed.

Thus, the Brownie Bite.

The instructions say to cook a pan of brownies for 35 minutes. Heck no. I'm not staying up for that long waiting for brownies when I can be SLEEPING. I had a sleep deprived weekend and I'm trying to rest up for the Winter Olympics. Oh yes, I'm in Olympic watching training mode right now. It's tough work. Reading athlete profiles, clearing off saved programs on the DVR, and getting a box of Kleenex ready for those touching Curling championship wins.

I baked half a batch in a mini cupcake pan. I filled 24 and had leftover batter (which I tossed because nothing was getting between me and my pillow). I baked them for 10 minutes.

The texture is a little spongy because half the egg mixture was whipped into a ribbon and folded into the chocolate batter. There is no leavening agent, only the power of the egg! Please note that many bakers who made the 9 x 9 pan of brownies found them gooey and fudgey.

  17. I love brownie bites. They just seem healthier since I'm only having a bite! Of course, 10 bites later, I find myself quite full...but happy :-P

  18. I hear ya on the sleep deprivation thing. Actually I'm kicking myself that I didn't come up with borwnie bites. I mean it's me. I'm make-any-recipe-into-a-cupcake queen over here. I'll just continue to the blame the sleep deprivation for all of my misgivings. Cool? ;)

  19. I almost made minis too but it's so much work cleaning that darn pan afterwards. Yours look lovely!
    I'm an Olympics junkie too. I hope the opening ceremonies make us proud.

  22. Bites..... great idea! They look perfect for dunking in coffee (to wake you up) or milk! Send a batch to Vancouver! I just finished sending off our figure skating team, here in Spokane - I THINK they're ready - let's hope so! :)

  23. Fantastic! I've seen a few baked in individual pans, they all look great :) I used the pan, but I also put some in a ramekin, and that was incredible topped with vanilla ice cream and ganache!

    Your bites are clever and not because of the time saving element. I think they look better than brownies.

    I was one of those who had gooey chewy brownies and I must say, they were good.
