Waffled Chocolate Chip Oatmeal Cookies

Last Saturday was one of those weekend days where you barely leave the house. Although it was nice outside, I just lounged around for most of the day...a little laundry, a little junk food, a little reading, a little DVR, and a lot of napping. On Saturday mornings, my radio (at home and in the car) is always on KCRW 89.9 FM Public Radio to hear Scott Simon on NPR's Weekend Edition Saturday, This American Life at 10 am, and KCRW's Good Food at 11 am.

I love KCRW's Good Food. Evan Kleiman, chef and owner of Angeli Cafe in Los Angeles, hosts a delicious food show. Covering local eateries with Jonathan Gold, the politics of food, chef interviews, and a weekly farmer's market report that makes me (usually) jump out of bed and run to the farmer's market for fresh California fruits and vegetables. If you aren't in Los Angeles, you can podcast the show and read the Good Food blog!

On Saturday, Evan discussed the waffle! Russ Parsons of the Los Angeles Times discussed making yeasted waffles, and Dan Shumski talked about his great blog, the Waffleizer where he puts everything in the waffle maker to determine "Will it Waffle?"

He's made Waffled Soft Preztels, Waffled Falafel, and, of course, the Waffleburger.

I finally dragged myself out of house, headed to Target and picked up a waffle maker. (Yes, the power of suggestion works very well on me :) Then a quick batch of the Chocolate Chip dough...and yes, they do waffle!

Waffled Chocolate Chip Oatmeal Cookies
This isn't a waffle with chocolate chips. It is a cookie baked in the waffle maker.

This batter is thinner than a typical chocolate chip cookie dough. That makes it easier to get into the waffle maker. The final waffled cookie tastes like a soft chocolate chip oatmeal cookie! The shape is fun and interesting too.

Thanks Dan for such a great blog! It is so much fun to read...can't wait to throw in something else into the waffle iron!

Makes about 20 cookies

1/2 cup (1 stick) unsalted butter, melted
1/2 cup plus 2 tablespoons firmly packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup unbleached all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon (I added this to the recipe. Optional.)
3/4 cup old-fashioned rolled oats
3/4 cup semi-sweet mini chocolate chips (I think using the mini chocolate chips is key...regular chips would be too big)

1. Preheat waffle iron.
2. In a large bowl, whisk the melted butter and brown sugar until smooth.
3. Add the eggs and vanilla, whisking to incorporate.
4. Stir in the flour, baking soda, and salt. Add the optional cinnamon. Don't overmix.
5. Add the oats and chocolate chips and stir to combine. The dough will be thinner than a regular chocolate chip dough.
6. Spray the waffle iron with nonstick cooking spray or grease with a towel or pastry brush.
7. Scoop small amount of dough onto each waffle section. Close the machine and cook until the cookies are set and beginning to brown. Dan says "This won't take very long — probably two or three minutes, depending on the heat of your waffle iron." Mine took about 4 minutes so it depends on your waffle iron.
8. I used chopsticks to lift out the cookies. They are soft when you remove them and firm up a bit as they cool. Mine stayed soft...I like soft chocolate chip cookies.
9. Transfer the cooked cookies to a wire rack.

  4. A great excuse to bring out the waffle maker (which regularly gathers dust in my kitchen)! BTw, have you tried making moffles (mochi in a waffle maker) --- as you are a mochi aficianado, you should do a good search and check it out...I love it!

  6. I used to own a waffle maker and like so many things that I have owned over the years one day decided it was not getting used enough and I tossed it! So, now looking at your post, I am feeling a tinge of regret!
Will check out this blog and radio show you are mentioning!

  9. What?! That is awesome. I've stopped by The Waffleizer a time or two, but forgot about it. Looks like I need to go back. We got a waffle iron as a wedding gift nearly 4 years ago, and I don't think we've ever used it.

  12. These look like so much fun! I'm not very fond of oats in my chocolate chip cookies though. I wonder if they will still turn out alright without the oats.

  18. Wow Mary, my jaw dropped when I saw your title and opening picture! Such a cool concept, kudos to the Waffleizer guy for the idea, and kudos to you for sharing it with us, hehe. It's a funny coincidence, my blog post to be posted tomorrow morning is also about waffles...made with a waffle iron from Target too! I hope you got a better model than ours, but for the purpose, ours has been performing beyond our expectations.
