Fresh Strawberry Cupcake

Oh, strawberry.
I adore you.
Usually, I don't bake with strawberries. I just eat them straight from the pretty green cartons.

But here, I made some fresh strawberry cupcakes.

I topped these with a quick frosting of butter, powdered sugar and strawberry jam. Of course, you can put a lot more frosting, but I'm sorta an anti-frosting gal.

    I agree with you that I don't usually like to bake my strawberries (they rarely even stay in the carton for long), but I might have to make an exception for these. They look so summery and inviting. :)

    I don't bake with my strawberries very often either but am always looking for new recipes just in case. Bookmarking this one!

    I'm a tad obsessed with baking with strawberries. I think they get a million times better than they already are when baked. Love the cupcakes!

    I love strawberries but am yet to bake with them - these look delicious! And I totally agree on the anti-frosting, I like a little bit but the real star has to be the cake.

    i always get one extra carton of strawberries to be eaten on the way home. but you know i love having strawberries surrounded by white cake or on top of buttery/salty shortcake.

    I love the shot of the inside of the cupcake! And it looks like the strawberries didn't make the dough wet and gooey, as I've experienced before. Yum!
