Citrus Currant Sunshine Muffins
For this week's Tuesdays with Dorie selection, Lauryn of Bella Baker Citrus Currant Sunshine Muffins on page 7 of Dorie's book, Baking: From My Home to Yours.
I used the zest and juice from a Cara Cara orange, juice from a blood orange, and a bit of juice from a Meyer lemon. In addition, Zante Currants were thrown into the mix. The recipe says 20 minutes at 375 degrees, but I think you should start checking at 15 minutes as my 20 minute muffins were a bit overdone.

I have never had a blood orange. Can you believe it? I want to try that though. These were great little muffins. Yours look wonderful.
ReplyDeleteThis is fabulous. I love the refreshing flavors of these fruits, perfect for the warmer days ahead. Just got done with some lemon and honey scones so perhaps I will venture with this next since I still have some blood oranges left!

ReplyDeleteWhat interesting citrus you used! My husband bought the orange I used and it was neon orange so I suspect it was some fancy variety, but I'll never know!

ReplyDeleteHmmm, I used Cara Cara and Blood oranges, too. I didn't have any lemons, so I used lime juice. They were still delicious the second day.
