Thin Mint Pancakes - National Pancake Day

March 1st is National Pancake Day (celebrated at IHOP with a free pancake/fundraiser). Next week is Shrove Tuesday or Fat Tuesday and you can make pancakes again. This was done to empty the kitchen of eggs, sugar and cream before Lent.

My friend's daughters were selling Girl Scout cookies. I helped them out by selling 22 boxes to my co-workers...and I bought 31% of said 22 box order! So, I'll be making some Thin Mint inspired goodies. In the past I've made Thin Mint Cupcakes, Thin Mint Brownies and Thin Mint Tart Crust...we'll see what else I can make!

I recently purchased the Cultured Buttermilk Blend product by Saco. Have you tried it? Can't figure out if I like it or not...I guess I need to make recipes with and without the real buttermilk and compare.

Thin Mint Pancakes
I made 1/2 the recipe for Buttermilk Pancakes that appears on the Buttermilk can! You can make any buttermilk pancake recipe and crush up some Thin Mints and add them to the batter. What can be better?! Um, nothing. :) Happy Pancake Day!

Buttermilk Pancakes
4 T (1/4 cup) Saco dried buttermilk blend
1 c flour
1 T sugar
1 t baking powder
1/2 t baking soda
1/4 t salt
1 egg
1 cup water
2 T vegetable oil
10 Girl Scouts Thin Mint cookies, crushed or cut into small pieces

Mix together the dry ingredients, including Thin Mints, in a bowl. Mix together the egg, water and oil in a measuring cup. Mix together just until mixture is smooth; don't overmix. Drop onto a hot, greased pan and cook until the top is full of tiny bubbles. Turn and brown other side.

  1. Oh yum these look delicious! I can't beleieve somwehre is giving away free pancakes! We don't even have pancake houses like that in the UK. So jealous!

  2. I'd be interested to try that stuff. It's actually really hard to get any buttermilk here, I have to drive about 6 miles to find somewhere that sells it which is very annoying. Back home in Ireland every shop sells it, probably because everyone loves soda bread!

  4. I love the buttermilk powder! I was always having to throw the buttermilk out before I used it all up. Now I always have it on hand!

    I'm gonna have to make these pancakes on Tues!!!!

  6. You have no idea how much I wish I had some thin mints right now! YUM!

    I love the Saco buttermilk. It's so much more practical - it lasts forever so I don't have to worry about using it up quickly.

  11. Oh no you didn't! And I just finished the last box of Thin Mints...how fun that would be on Shrove Tuesday. We made a Dutch Baby pancake this morning, but it was consumed within about 30 seconds of it coming out of the oven, so no NPD post.

    I use the Saco stuff almost exclusively because I just can't stand buying a big carton of buttermilk and wasting most of it. I have found that if I try to use milk + Saco, the recipe sometimes doesn't work. If I use water, like the carton tells me, it does. I am now trying a bag of King Arthur dried buttermilk powder, so we'll see if that works better. For all I know it is repackaged Saco...

  12. So funny... when I was thinking of what sort of pancake to feature today, Girl Scout cookies came to mind. I was afraid to buy them though...those things are dangerous to have around my house. These look like a fun pancake :)

  16. I bought 4 boxes of them this year from the moms in the office knowing I would jump into your cannon of recipes for them so I could bring all the calories back to the lunchroom for them to consume.

    They are sitting here in my office now plotting which way to come back.
