Fava beans are in season! I've been seeing them in the Farmer's Market. When I saw the fava beans and the first-of-the-season white corn, I knew I had to make a summer side dish.
Shell the beans and then blanch or steam them for a few minutes.
After, the outer coating is removed, leaving a bright green fava bean.
I cut fresh white corn off the cob. Some olive oil is heated in a pan and the corn and fava beans are heated through. I threw in some walnuts at the last minute. Season to your liking!
Ingredients:
Fava beans
Fresh white corn
Walnuts
Olive oil, salt & pepper
What an interesting combination, one I've never thought to put together.

ReplyDeleteMary, what do I know about "cooking"? Is it a Bundt? That I know... :) Sure, I think you can replace the favas with lima or edamame but then you don't get to double shell the favas. I feel like a pioneer woman doing that. :) - west coast mary

ReplyDeleteswitching the bean here would prob change up the flavor profile? sure you can swap edamame but they're not nearly as naturally "buttery" as favas are so the walnuts might not blend as well. anyway, just my 2 cents. i think this is a great recipe that would pair easily with some brown rice.
ReplyDeleteLooks delicious! My two favorite veggies..corn & fava beans! I like to eat the fava beans plain too. I just boil them and then eat it with salt just like edamame :o)
