I Like Big Bundts - Day #21
Happy Sunday! I'm still in denial that it's really November. Like, Thanksgiving in a few weeks? Shut up!Actually, the only date I see is November 15th - National Bundt Day! Hee hee. We're on Day #21 of I Like Big Bundts - bringing you 30 bundts in 30 days leading up to National Bundt Day!
So, this is my third (and probably final) year doing this...and I've made about 100 bundts on this blog. I'm always looking at foods thinking, "Can I Bundt that?" :) Today, the Rice Krispie Bundt answers that!
I made the traditional Rice Krispie recipe and smashed it into a small 6-cup Bundt. If you do this in a regular, traditional 12-cup Bundt, you should double the recipe or know that it won't be as tall. Also, I really smashed it down as you can see in the cross-section photo.
I topped the bundt with some chocolate covered sunflower seeds from Trader Joe's. Love these! The colors are different than the usual primary colors...nice!

Recipe:
3 Tablespoons butter
1 package regular marshmallows or 4 cups mini marshmallows
6 cups Rice Krispies
Generously butter bundt pan. Do not flour.
Melt butter in large pan over low heat. Add marshmallows and stir until completely melted.
Remove pan from heat.
Add cereal. Stir until coated.
Press into 6-cup bundt pan.
Invert and cool.
Bundt Pan: Smaller 6-cup Bundt Pan (the traditional bundt pan is 12-cups)
I've been wanting to make something like this, but was afraid of having problems unmolding it. Any issues with this?

ReplyDelete@Mrsblocko I put a ton of butter in the pan on this one (no flour). The pan is already non-stick too. I also inverted it about 10 minutes after it was made. - mary
