Lemon Poppy Seed Muffins
Tuesday, March 4, 2008
As I continue through Dorie Greenspan’s Baking: From My Home to Yours book, I found a collection of muffin recipes I want to try. (She also has about 10 brownie recipes that I’ll definitely get to soon). This morning, the selection was Lemon Poppy Seed Muffins (page 10). I have never used poppy seeds before and picked up some at Cost Plus (now called World Market – but will always be Cost Plus in my book) during the holidays.
Yes, if you eat these and take a drug test, you will test positive for opiates. Believe me, after eating three pieces of whole nut/grain/healthy bread studded with poppy seeds years ago, I had a false positive! I completely felt like Elaine on Seinfeld.
This recipe is very easy to make and it also involves some yummy ingredients: the lemon, the butter and the sour cream (again). The glaze is made with sifted powdered sugar and fresh Meyer lemon juice (from my dad’s backyard!) It is a perfect morning meeting, light brunch buffet item.
In Dorie’s book, she made hers without the muffin cups so the glaze could drip down the sides. I didn’t feel like buttering this morning so I opted for the easy-to-transport muffin cups.
