Cranberry-Pumpkin Rolls
I made some Cranberry-Pumpkin Rolls for Thanksgiving dinner. The dough was easy to put together, but the "Yield 16 rolls" is a bit off. (However, I used active dry yeast and not the instant yeast called for in the King Arthur recipe - I don't know if that made a difference.)
I used dried cranberries, golden raisins and diced crystallized ginger. The spices include cinnamon, ginger and cloves.
I heart the dough hook of the KitchenAid.
The left photo is half the dough after the first rise. The right photo is 17 rolls (remember, the yield is 16 rolls).
After the second rise. Okay, these aren't rolls, they are gigantic bagels without holes! This is dinner roll for a sumo wrestler, but perhaps not for Thanksgiving dinner. I think this could be 10 Weight Watcher points. The satsuma tangerine is in the photo for scale! :)
Although large, these were quite tasty!! Here is the recipe from King Arthur flour!

wow --- one can make a meal out of 1 of your rolls! Large or not, they look delicious!
Oo yum! Though they make me think of hot cross buns and not something I'd want to eat with dinner.
That s why they re called sumo then. They re massive. I like how they look yummy. :)
