St. Patrick's Day Ice Cream Jello
Happy St. Patrick's Day!

St. Patrick's Day Ice Cream Jello
Ice Cream Jello

Mix together to dissolve:
2 large packages (6 oz each) of green Jello (or any flavor)
1 packet of unflavored gelatin
4 cups boiling water

Add:
1 quart vanilla ice cream (I would use less ice cream next time)
Stir til dissolved

Pour:
9 x 13 glass dish

Refrigerate overnight, cut and serve! The ice cream will float to the top of the jello.

Oh - I remember doing this as a kid. I had the Jell-o cookbook and used to love making everything in it. Your photos are awesome!

I'm planning on making this in the next couple of days. If you didn't use the full quart of ice cream, how much did you actually use? Is a pint too little? I think this will be a huge hit at my daughter's daycare.

Hey Liz, I would use close to a quart (2 pints). I think one pint is too little. And it was just personal preference on my part for not wanting that much ice cream. It didn't ruin it...it'll be fine with a full quart. Here is my friend's recipe and JustJenn uses 3/4 of a quart: http://justjennrecipes.com/category/jello/

Hi Mary, thanks for the feedback. I made the Jello last night, along with the Thin Mint Brownie recipe you recently shared (YUM!). I used 3/4 pint of vanilla ice cream but it didn't have as nice of a thick layer of cream on top, like your picture showed. I ended up with a thin layer, which is fine. Do you think it could be there result of overmixing?

Liz, you used 3/4 of a PINT or a QUART? You need to be closer to a Quart (4 cups). I think is depends on so many things...the type of ice cream used, whether it all melted into the jello...I'm not sure. No two look the same! My cousin makes it and it is always flatter...but it also might be the container. Oh, the fluctuation in jello...I hope it was still delicious! - mary

How long will it keep outside the fridge? If I bring it for my son's class, I would have to drop it off in the morning and it may sit in an insulated bag for 2-3 hours. Is that too long?

@Anonymous How long? Hum...I'm not sure. I've had it out at a party for about an hour. Will the insulated bag have a pack of ice in it as well? That would definitely help. The gelatin will keep it together, it'll just get really soft and hard to eat with more time. Again, I'm not sure...mine are usually served straight from the refrigerator. - mary

Awesome Recipe. I would also use a bit less ice cream as the top layer was a bit muchie. Next time I'll try 3/4 cup. But looked beautiful.

try using lime sherbet next time in place of the icecream we do that with the orange jello and sherbet.
