Chocolate Chip Oatmeal Cookies
Heath Oatmeal Toffee Cookies
Half a bag of the Heath Toffee Bits remained after making the Caramel Crunch Bars with Tuesdays with Dorie...so I turned the package over and found the recipe for Oatmeal Toffee Cookies!
Half the batch were Oatmeal Toffee Cookies (click for recipe) with Heath Toffee Bits, and the other half used mini-chocolate chips.
I cut the sugar from 2 cups to 1 3/4, used old fashioned oatmeal instead of quick cook oatmeal, and (of course) did not include the optional coconut flakes. The package says you should get 4 dozen cookies but I got 5 dozen because I made them a bit smaller.
My toffee cookies came out a lot flatter than the chocolate chip ones...I wonder why? Same dough, just different "bits" added in. Oh well, they were gobbled up at the library.
Here is the recipe for Heath Oatmeal Toffee Cookies on the Hershey's Kitchen website!

Well, if you check way back in maybe January in my blog, you will see these are my FFHs favorites.. Really, I make these for him constantly. Its under Back of the package.. my post that is. I find this funny. But then I am an odd one:)
Those look so good! I've been wondering what to do with my leftover toffee bits. :)

Yum! Perfect looking cookies. Reminds me that I haven't made oatmeal cookies in a while..
eeks i love HEATH, though in canada we don't get heath, but we have something similar called SKOR! heath and skor sound like two dueling brothers... these cookies look YUM!!!
Forget reading books, I'm coming to your library to nosh on these yummy looking treats!!! :)
You just posted about two of my most favorite cookies. First of all, oatmeal in any cookie is a huge plus. It adds such great texture!! And heath, oh my beloved heath bars. I love it!! These cookies look just fabulous!
Oooh! I love this -- my hubs can eat the heath ones, and I can eat both!! These look fabulous! And they have oatmeal, so they are almost as good for you as baby carrots, right?
These are beautiful. I'm thinking of bringing cookies to my next doctor's visit and may try these for the staff to try.
I'm hosting a "tea for ten" in a couple of weeks. Do you have a favorite scone recipe?
I am convinced that oatmeal and chocolate are one of those perfect pairs...of course, I wouldn't mind an oatmeal and toffee cookie either!

These look delicious! I love anything with toffee!
ooh these look soo good! I've been craving oatmeal cookies for awhile now so I'm going to have to make some this weekend! With chocolate like you, no raisins!
Those look delicious! I love oatmeal cookies!
Heath Oatmeal Toffee Cookies have everything in a cookie that I love! A must try...thank you!
Toffee bits sound awesome! I don't think we have them in Australia. The flatness might be a sugar thing. I find with Anzac biscuits they flatten more with more sugar.
i love heath anything cookies!! :)
Oatmeal toffee is one of my favorites. These look super tasty.
Wow, these look amazing. I'm pretty sure I'm going to whip up a batch this weekend. Thanks for the recipe.
It's a toss-up now -- making these or re-making the bars with a bigger batch. Or, I could just buy more toffee bits...
You always bake such delicious things.
Those look so good! I love how you stacked them.
Those look absolutely divine, all very good and pretty nice... LOL LOL But the reality is that, I was not left with half a bag of the toffee bits... Things that make you go hummmm!
Me? Are you insinuating that I would... could be a toffee monster? lol
I am now Craving these!!!! Fantastic!
Triple yum. I'm a huge lover of anything w/ Heath toffee in it!!
Heath bars and oatmeal cookies...2 of my most favorite things. I can't believe I never thought to put them together.

You are very truly talented.
Those look yummy. And good call on leaving the coconut out--no need for coconut. =)
OMG I just decided to head over to my favourite food librarian's blog and I see one of my food weaknesses - COOKIES THAT LOOK LIKE THAT! Ah. You are truly a genius! Lovely!!!
OH....my GOD! I NEED the toffee ones!
Anything with crumbled Heath bars is worth noshing. Calories be damned! ;)
haha, I just googled Heath Oatmeal Toffee Cookies to see if I could find out why mine turned out so flat. Came upon your blog & read that yours were flat too! My daughter likes flat cookies so I'm just gonna roll with it. :) You have a lovely blog!
