Half a bag of the Heath Toffee Bits remained after making the Caramel Crunch Bars with Tuesdays with Dorie...so I turned the package over and found the recipe for Oatmeal Toffee Cookies!

Half the batch were Oatmeal Toffee Cookies (click for recipe) with Heath Toffee Bits, and the other half used mini-chocolate chips.

I cut the sugar from 2 cups to 1 3/4, used old fashioned oatmeal instead of quick cook oatmeal, and (of course) did not include the optional coconut flakes. The package says you should get 4 dozen cookies but I got 5 dozen because I made them a bit smaller.

My toffee cookies came out a lot flatter than the chocolate chip ones...I wonder why? Same dough, just different "bits" added in. Oh well, they were gobbled up at the library.

You know what is so funny.. to me anyway, yesterday you posted about the strawberry muffins.. my kids fav, and today you have oatmeal toffee cookies up. Well, if you check way back in maybe January in my blog, you will see these are my FFHs favorites.. Really, I make these for him constantly. Its under Back of the package.. my post that is. I find this funny. But then I am an odd one:)

eeks i love HEATH, though in canada we don't get heath, but we have something similar called SKOR! heath and skor sound like two dueling brothers... these cookies look YUM!!!

Toffee bits sound awesome! I don't think we have them in Australia. The flatness might be a sugar thing. I find with Anzac biscuits they flatten more with more sugar.

haha, I just googled Heath Oatmeal Toffee Cookies to see if I could find out why mine turned out so flat. Came upon your blog & read that yours were flat too! My daughter likes flat cookies so I'm just gonna roll with it. :) You have a lovely blog!
