June Gloom Gingerbread
Los Angeles is having a major case of June Gloom. In the last couple weeks we have had overcast skies, rain, foggy days, and even lightening. That marine layer just won't go away. There is only a 58% chance of sunshine in June in LA and I'm beginning to wonder if I need to take Vitamin D supplements instead of my daily dose outside. And perhaps a few hours in front of my Lowell Ego lights. Sigh. Just kidding...sorta.
This may sound very pathetic to some, but these lower temperatures and cloudy skies make me think of FALL. And what's the flavor of fall? Gingerbread.
I'm always looking for gingerbread recipes. I love ginger. I love unfrosted cakes (yeah, JustJenn, I'm not a member of Frosting Nation or "Legalize Frostitution" campaign). Gingerbread is the perfect combo of not too sweet cake, moistness, cinnamon and ginger.

One of my co-workers said it tasted like little Ginger People chews were in the cake. Sorta like a soylent green ginger cake! :) This cake only uses ground ginger, ground cinnamon and molasses for the spice - making it really easy to assemble!
I dusted my squares with powdered sugar but a dollop of whipped cream would be nice too.
I find that cutting everything and putting them in cupcake holders makes for easy grabbing by co-workers and less mess. Good thing I picked up 1,000 of these at Surfas recently! :)
Hopefully the sun WILL come out tomorrow! :)

I hear the sun is making an appearance this weekend. I love the June gloom though, it puts me in the mood to cook and bake delicious things like this gingerbread!
Well that stinks - I hate rainy, gloomy weather. We've had an ok June - lots of rain during the week but the sun has been coming out on the weekends which sort of makes up for it. The gingerbread looks terrific!

I was just telling my husband it looks as if we've skipped summer and went straight into fall! LOL! (Btw I think I'm the only person delighted that it's gloomy!)
Love gingerbread anything, anytime... I need to bust out my recipe for gingerbread cake too! We've got family visiting so there's an excuse to bake! :D
I am a believer in all foods at all times during the year. This would hit the spot here right now in NJ also. How do you cut them so evenly? Gorgeous!
I wish my coworkers would bring in beautifully presented little squares of yummy gingerbread. Maybe when they read your blog they'll take the hint! :)
I'm sorry about your sunshine, but then again you have Surfas and we don't. (To be honest, not much sunshine, either.)
Luckily, it's not too gloomy here in Wisconsin, but I'm a sucker for gingerbread. Love it, and love those simple cakes. Frosting had its place, but sometimes simple snack cakes are best. Might have to squeeze it in before leaving tomorrow :)
I love gingerbread. We've been having some serious gloom in DC, too so I feel your pain. It's just not fair, is it?

Your gingerbread looks lovely. We live in Northern California and it's been so cold. Yuk! I love hot summer weather.

Those are so cute, I like how you put them in cupcake wrappers. And, my dad was just complaining and warning me about June gloom because I am headed to LA on Thursday next week. Don't worry, we've been having that here in SF.
I've only made gingerbread like this once and it didn't turn out so well but this inspires me to give it another chance!

Steve and I were in Santa Barbara last weekend for his UCSB graduation, we both commented on how gloomy it was and then were reminded about June Gloom, I had completely forgotten about June Gloom - guess I have been away too long!
