For this month's Martha Stewart Cupcake Club, Tracey from Tracey's Culinary Adventures chose Zucchini-Spice Cupcakes on pages 44 of Martha's fantastic book: Martha Stewart's Cupcake Book. Tracey is the most awesome baker, cook, and all around nice person! I love her! Go visit her blog!
Martha Stewart Cupcake Club is a new baking club started by Sugar B of Eat My Cupcake and we are going to make one cupcake recipe per month (or more!) Check it out on the new website here.
I made this recipe earlier with a simply glaze, but this time I made it with the recommended Cream Cheese Frosting. It was the first recipe I made from this book, and it's a winner! I was very happy to make it again as I still had lots of zucchini hanging out in the veggie drawer.
The recipe calls for a boatload of cream cheese frosting. I made 1/2 the cupcake recipe and about 1/4 of the frosting recipe. Me thinks Martha and her crew love the frosting way more than me. :)

I thought this recipe sounded familiar! They look so pretty with the frosting. I don't care for frosting but I always have to make extra when it comes to my in-laws cos they love the stuff. Can't understand it!

I hate to be the cupcake party pooper, but I wasn't a big fan of the texture and overall taste of mine. Oh well. You win some, you lose some.

Hm... a glaze - now that sound equally as delicious! I agree - there was enough frosting to make... a cake, which I did! These look fantastic - especially outdoors, I love the serving tray!

Nikkilooch, I didn't use a pastry bag...just the tip in a Ziploc freezer bag! It makes it easy to toss after completing the piping! :) - mary the food librarian

I thought these were just terrific, too. I did make one (or two) with the cream cheese frosting, but enjoyed them just as much plain.

Lovely cupcakes! I like the cross-section shot. I agree that the frosting recipes make way too much, but maybe that's not a bad thing when it comes to cream cheese frosting.
Love the cross-section shot, very nice. All of it is very nice. You are right, it made a boatload of icing and I only made half also...does this stuff freeze??? I noticed that the pumpkin recipe calls for this, I think, so maybe I should just go ahead and do that one and use up the icing! Your cupcakes are beautiful!

I just made this for the second time - a full batch of 2 dozen - and they disappeared frighteningly fast. I put cinnamon in the cream cheese frosting and only made half the frosting for a full batch of cupcakes.
