Before I started baking from scratch a few years ago, cardamom never had a spot in my kitchen cabinets. But now, there is always a fresh bottle from Penzeys ready and waiting.

Today’s Big Bundt is a Cardamom Vanilla Pound Cake baked up in a Nordic Ware Bundt Pan. This is a rich pound cake with a nice subtle flavor of cardamom and vanilla. You can even wait a day before serving so the flavors can develop.

I used vanilla paste instead of vanilla beans. I love the convenience (and cost) of vanilla paste. Have you tried it? I can also just pour the stuff on ice cream!

This has absolutely nothing to do with this Bundt but I have got to go to bed! After work tomorrow I'm going to a party and I'm so excited. I can't tell you about it until after the fact...but I hope I can snap some photos and write about it tomorrow. And no, it isn't Bundt related. But it IS cute-related. So crazy cute!

Like Day #4 Cinnamon Ripple Sweet Potato Bundt, this is a Big Bundt and pretty much fills the pan. Be sure to use a 12 or 14 cup Bundt pan.

Hi Mary! I think I've finally found a serious contender recipe for my department's Halloween party next week in this Bundt. I'd been having trouble finding something to make that would be not blatantly "Fall" but still be "warm" and "spicy." This one looks particularly awesome (not that the other ones didn't, I am fully planning to print out all the recipes from this month, hehe). I think I'm going to try to pair it with a quick strawberry sauce also spiked with vanilla and cardamom... I'll let you know how it goes.

I love cardamom! This cake looks wonderful.

Mary, I'm wondering if you have a recommendation on a mini bundt pan. I know you have a variety of pans, but I'm not sure if you have any minis. I took a look on Amazon, and there is a pan that's like a muffin pan, but bundt-shaped, and then there are pans that are a little bigger (with 6 small bundts per pan). If you have a mini pan that you like, I'd love to hear about it. Thanks!
