Today, it's the Chocolate-Cinnamon Bundt Cake with Mocha Icing!
The subtitle is: If at first you don't succeed and almost wire the entire library...try, try again.

See, the first time I made this, I confused a little thing called the teaspoon and tablespoon. Tea versus Table. Only the letter "b" and "l" are different. And I almost had the library flying.

The first time, I used two TABLEspoons of espresso powder instead of two TEAspoons. The cake baked up nicely but had a really, really strong coffee aroma. The kitchen smelled like a cranked up coffeehouse. I glazed it, photographed the cake and cut a slide for the "cross sectional photo." I usually take a bite of this piece to make sure the cake isn't strange and I used salt instead of flour or something. Man, my little bite was way tooooo strong.

So, I made it again with the proper proportions of caffeine. It still has a really strong coffee flavored jolt. If you like coffee and chocolate, this cake is totally for you. If you want a little less coffee, then ditch the extra espresso in the icing. (The cake has 2 teaspoons of espresso powder in the cake and another 2 teaspoons in the icing).

Dietary notes: The cake can be made dairy-free if you ditch the chocolate chips or use dairy-free ones. The icing has butter, but you could leave it off and dust with powdered sugar.

I saved some of the mini chocolate chips to place on top of the cake! By the way, I definitely think you should use mini chocolate chips and not regular sized chips...the minis are more delicate.

First off, I love the idea of doing a series of bundt cakes! So yummy. I rarely make bundt cake, but they're soooooo good!! :) Definitely need to make more of them.

Monica, You know, I didn't even taste the cinnamon. This is very coffee-centric. It is made like the other cinnamon chocolate bundt (but uses oil instead of butter) but it is a totally different cake. I like the other bundt more! I think I'll make it again during this marathon b/c it is my favorite Bundt! :) - mary

I am totally loving this 30 days of bundts. Bundts are my favs, too, simply because no arseing around with pans, and no fancy decorating needed! This looks great, can't wait to try it. And lucky you getting free cocoa. I take anything free, so I'm with you!

Oh, I have to comment about this cake. It looks divine. I love how there are rows of chocolate chips embedded in the cake, and you can see them at the top of the cake slice.

I love bundt cakes! But really, leave off the icing if you're dairy free? How about 2 Tbsp of Earth Balance or 1 Tbsp of oil or 1 -2 Tbsp of nut milk? That frosting will firm up even without the 2 Tbsp butter, you could even use water or add a bit of corn starch or tapioca if you're worried. Trust me, I've done these things. No prob. So did you eat the first cake anyway? I would have cut it into chunks and made bread pudding. Yum!!!

This looks great! I'm a huge huge fan of cinnamon, so I'm sure I'd like this. Bookmarking it for future use. I've never tried making bundt cakes, should get myself a pan and rectify that as soon as I can.

On another note, I love the 'I love big bundts" phrase! Hehe. Are you a Friends fan, or was it just a coincidence? :P

Thanks for stopping by! I don't eat all these Bundts myself! :) I bring them into my library and my co-workers have been going to town. I also bring them to another library to spread it out a bit. And my roommate will bring some to her work and family! If you were in Los Angeles, I'd bring you a Bundt! :) - mary
