Chewy, Chunky Blondies - Tuesdays with Dorie
Chewy, Chunky Blondies

For this week's Tuesdays with Dorie selection, Nicole of Cookies on Friday picked Chewy, Chunky Blondies on page 109 of Dorie's book, Baking: From My Home to Yours.

Chewy, Chunky Blondies - Tuesdays with Dorie
I made some alterations...based on my tastes, co-workers allergies and what I had in the pantry. I skipped the coconut (of course), ditched the walnuts (co-worker can't have pieces of nuts), and switched the butterscotch chips for peanut butter chips because that's what I had!

These come together quickly and there is just something comforting and easy-peasy about bar cookies. No scooping teaspoons of dough. Just plop it into the pan, spread it out with an offset spatula and bake!

Mmm, I love blondies, but I only make them like once a year. Guess it's time again!

They looks so lovely in the paper holders. The add-ins sound good, too.

These look great. Chewy and not too dry. I make similar adjustments based on what I have and bf/coworker preferences.

I almost used peanut butter chips, but went with the butterscotch chips, this time. :) Great looking bars!

The brownies, with all of your switches, look quite delicious. I'm sure there were some happy eaters at the library when you took them in!!

Best,
Bonnie

Hey, just like mine! Coconut haters unite! =P I ditched the nuts because my kids don't like them in baked goods, and just thought PB chips would be less sweet than butterscotch ones in these. Mmm.

Thanks for baking along with me this week! I'm a librarian too, and the folks at the library love when I bring in baked goods. These were really perfect because you could add what you want and leave out what you want.

They look perfect Mary - as always :)

I made the same substitutions Mary, except I kept the coconut in them. It didn't add much flavor, just a chewy texture. Hope the coworkers enjoyed them! They look perfect :)

Love them in the cuppy cups. Very elegant for such a simple and delicious bar.
