Gingered Carrot Cookies
For this week's Tuesdays with Dorie selection, Natalia of gatti fili e farina chose Gingered Carrot Cookies on page 162 of Dorie's book, Baking: From My Home to Yours.
I skipped the coconut (of course) and selected dried cranberries instead of raisins. I feel these didn't have enough carrot flavor. Perhaps I should have used the larger shreds of carrots (I used the finely shredded size of the grater).

Yours look great. I want to try dried cranberries next time I make these. Yum.
My in-laws do a carrot cookie with an orange juice/powdered sugar glaze, but it's with cooked, mashed carrot.

THAT'S what was missing. The carrot flavor. They were good with frosting.
I went with cranberries as well. The carrot flavor is subtle, but I still liked them a lot.
I grated on a large hole and got carrots flying out of my cookies everywhere! Very nice!
Cranberries sound delicious, although the currants weren't bad. We couldn't taste the carrots at all.
I don't think that these tasted like carrots, but I was ok with that. Ginger was the strongest flavor in the ones that I made, and I love ginger.

All that other stuff interfered with the carrots! Good stuff though - and I used the small grate as well. Oh well - guess we need to find some "carrot extract" huh?
