Pumpkin & Ginger Bundt
Happy Monday!
It's Day #9 of I Like Big Bundts...my crazy-ass quest to bring you 30 Bundts in 30 Days...all leading up to National Bundt Day on November 15th. I hope you join me in celebrating the world's perfect cake vehicle :) Pretty and easy to make bundts!
I'm frantically writing this post in the hotel lobby in Monterey, CA. Yes, the beautiful seaside in Northern Cal. I'm at a conference for the next few days and was only able to bake and photograph the bundts yesterday (yes, I made three bundts in one day...hence the phrase "crazy-ass"), but not post all of them. So, this will be a quick one. But, really, there isn't much to say except: Pumpkin. Ginger. Yum.
Di of Di's Kitchen Notebook suggested this Bundt to me. Thanks everyone for the suggestions! I might not get to make them all this round, but they are in my files for a future date!
Here is another reason I didn't get all my posts together! A very cute reason, no? Introducing Cidney! My cousin adopted her from the County animal shelter. We spent a lot of time bonding this weekend...and trying to get her life story. She was a stray and was never fixed (that'll be taken care of as soon as she gets well!), but we can tell that she had a family as she is house broken and very polite. She has kennel cough right now so she is particularly mellow. I've lived with cats most of my adult life, and this is the first time with a doggie. I'm excited!
I hope you try this recipe sometime this autumn. It is soft and subtle. A sprinkling of powdered sugar is all it needs...or a nice scoop of ice cream! :)

Pumpkin & Ginger Pound Cake from Fine Cooking
I made 1/2 the recipe and got 5 or 6 mini bundts. I was making so many Bundts yesterday that I seriously don't remember! Oops! They baked for about 20 minutes (depends on your oven). Test with a toothpick.

I love the minis! I've only ever made a big cake from this recipe. I haven't made one yet this season; I think it's time. =) I'm glad you liked it.

Congrats on Cidney!! Speaking of pups and pumpkins - keep in mind that pumpkin puree (not for pie) is good for dogs when they have an upset stomach. Hit me up for deets. Don't want to get into doggie digestion discussion in a food blog ;)

Cidney is such a cutie --- look at those soulful eyes! Poor girl, I hope she recuperates quickly. I know you'll have so much fun with her - there is nothing like getting the affection and loyalty from a dog.
The pumpkin/ginger combo in this cake sounds like a winner!
