Carrot Spice Muffins
For this week's Tuesdays with Dorie selection, Nancy of The Dogs Eat the Crumbs chose Carrot Spice Muffins on page 14 of Dorie's book, Baking: From My Home to Yours.
I skipped the coconut, raisins and nuts. I know, that's a lot of omissions, but I added a little more carrots and it was all yum.

All carrots all the time! I liked these with the add-ins and I've made them before with even more add-ins and they were wonderful.
I've seen every combination of things being added and/or skipped in this muffin recipe by various TWD bakers. A couple of people even skipped the carrots! Your extra carrot approach looks quite yummy, actually. Thanks for baking along with me this week!

these look lovely! and i'm sure they the pure carrot flavor didn't really need the distraction of all those add-ins anyway.
This was my favourite recipe of the summer. I added rolled oats and have convinced myself they are breakfast.
Yours look lovely just with carrots.
