Granola Energy Bars
These bars are very versatile and you can add your favorite dried fruits. I used dried blueberries, dried cranberries and dried apricots. I also skipped the coconut because it feels like dental floss (I like coconut flavored stuff but can't handle the strands).
Luckily, I live near a Sprouts Market with the bulk bins so I was able to buy small bits of the ingredients needed: slivered almonds, sunflower seeds, pumpkin seeds, and dried fruits. It also carried the brown rice syrup. This is an easy substitute for melted marshmallows in a rice krispie treat; I've been wanting to try it, and Dorie gave me a perfect reason to pick up a bottle. After measuring out your ingredients, it is a simple mix together and bake. Easy peasy and enjoy! Happy New Year everyone! And to those in TWD, I made the next recipe too (what?! I know, new year's resolution to have a tad less procrastination...) and it was delicious!
See you soon, Mary the Food Librarian
P.S. If you didn't get this book for the holidays from Santa or your family, then buy it! You deserve to start the new year with awesome recipes. :)

These energy bars look like a delicious snack! xo Catherine
Yours look perfect. Mine got really hard. But I made it work with a second batch baked at a lower temperature. I used this recipe as an excuse to get some brown rice syrup, too. Glad you're back with the new year. ;)
I've been wanting to try the brown rice syrup...good to know Sprouts has it. I'll have to stop by mine and get some. Also...I am a HUGE fan of those bulk bins at Sprouts.
I can't wait..received the book for Christmas and it is on my ..to make list!
Your bars look beautiful and I love the idea of using the brown rice syrup in a Rice Krispie treat.
I love shopping for these types of ingredients at Sprouts. Looks like your bars turned out great. I can't wait to make the brown butter cake. Sounds so good.
Such fun to see the combinations of ingredients this week and the ways people cut their bars, yours look so nice in that square shape. Just really beautiful looking bars. I wish now that I had made the effort to get out in the cold ice snow to get some for mine. They really do set them off nice, don't they? Lovely photos.
Your granola bars/squares look great! I love the addition of blueberries!
Oooh, rice krispie treats... you've planted a very dangerous seed in my head. The granola square on the bottom picture is beautiful.
Love the color variation in your choice of ingredients. They look like a work of art!
Your bars look great. Love your styling with the parchment paper!
